Tim Tam Cheesecake

Ingredients

  • 137g packet oreo original biscuits

  • 50g butter, melted

  • 2-3 different packets Tim Tams

  • 750g cream cheese, softened

  • 375ml (1 1/2 cups) thickened cream

  • 3/4 cup caster sugar

  • 1/4 cup boiling water

  • 3 tsp. gelatine powder

  • 200g white baking chocolate, melted

  • 200g dark baking chocolate, melted

  • 200g milk baking chocolate, melted

 

 

Method

  1. Grease and line the base and sides of a round springform pan with baking paper.

  2. Place oreo biscuits in a food processor and process until finely crushed. Add the butter and process until well combined. Spoon into the prepared pan and press over the base. Place in the fridge for 30 minutes or until firm.

  3. Arrange combined Tim Tam biscuits, in alternating colours, around the side of the pan. Return to the fridge.

  4. Place one-third of the cream cheese, one-third of the cream and one-third of the sugar in a clean food processor. Process until smooth. 

  5. Place 1tsp. boiling water in a small cup and sprinkle over 1tsp. gelatine. Stir until gelatine dissolves. Add the gelatine mixture to the cream cheese mixture and process until combined. Add the white chocolate and combine.

  6. Pour the cream cheese mixture into the pan and smooth out. Place in the fridge for 1 hour or until set.

  7. Repeat steps 4-6 with the milk chocolate and dark chocolate.

  8. Return to fridge and let sit for 3 hours or until completely set. Top with whipped cream and chopped chocolate. Serve cold. Enjoy!
