Olive Tapenade

About the Recipe

Ingredients

  • 1 cup pitted green olives

  • 1 cup pitted black olives

  • 1 cup pitted kalamata olives

  • 4-5 cloves garlic

  • 2 teaspoons capers (optional)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon thyme leaves

  • 1 Tablespoon lemon juice 

  • 5 Tablespoons olive oil

  • 1 roasted red capsicum (optional)

Preparation

Step 1


Put all the ingredients in a food processor. Pulse in 1 second intervals 10-15 times and scrape down the sides of the bowl. In the end, you want the pieces to be roughly 1/8 to 1/4 in size and you want to see all the colours of the olives. Chill for at least 1 hour for all the flavours to blend.
