Ouma's Rusks
For the South Africans out there reading this, don't think it's the recipe from Ouma's Beskuit company. It is beskuit, but oh, so much better! Our grandmother always makes these when she wants to treat us, and has a reputation for them tasting the best people have eaten! So make these and enjoy - you won't regret it!
Ingredients
1kg. self raising flour
1 1/2 teaspoons salt
6-8 cups bran
500g butter
4 cups brown sugar*
1 litre cream
Instructions
Sift the self-raising flour and salt into a large mixing bowl.
Add in the bran and mix well.
Cream the butter and sugar in a separate mixing bowl.
Add the sugar mixture into the flour mixture and mix until combined (crumbly).
Slowly add in the cream.
If the mixture is still too dry, add some milk.
Now, get out a large baking pan and grease or line with baking paper. Put the rusk mixture into it, pressing it down so that it evenly covers the pan.
Bake in the oven for 40 minutes at 180 degrees Celsius.
When it is finished, cut into rusks immediately. Then, put back in the oven on the oven racks to dry at 70-90 degrees Celsius. This may need to be done overnight.

*if you want to try a healthier option, you can use half maple syrup and half erythritol to substitute for the sugar. Just watch out that your mixture isn't too wet!
