Healthy Condensed Milk
This is great, quick healthy alterative for condensed milk. We usually make this recipe for chocolate fudge (see Baking) and it works well most of the time!
Ingredients
1 1/4 cup cream
1/3 cup healthy sweetener (we usually use erythritol or xylitol)
1/4 teaspoon salt
Instructions
Mix all ingredients into a microwave safe dish.
Place your mixture into the microwave and microwave for 3 minutes. Remove and whisk.
Return it for another 3 minutes and remove to stir again. Be careful, it's hot! Whisk carefully, as it rises as you stir. Notice that the colour has changed from a milk-white to an opaque with a yellow hue. It is almost done.
Return to microwave and cook for 1 more minutes and remove again and CAREFULLY stir it.
Cover the bowl loosely or leave uncovered to cool. Once it is completely cool it will be thick enough to store in the fridge. For an even thicker sauce just keep thickening it by letting it get cold.
